Since today is Anzac Day (okay, it's over in Australia and New Zealand ), I thought I would share a recipe for Anzac biscuits .
These biscuits were first made during World War I, using ingredients that did not spoil easily (in particular, they don't contain any eggs). It's often claimed they were made by wives of Australian and New Zealand Army Corps (ANZAC) personnel, and then sent halfway around the world to those soldiers on the front line. However, as you can see here, concrete evidence of this has proven hard to come by (and, even if biscuits were sent from Australia and New Zealand, it's possible that the recipe was very different). Nevertheless, these biscuits remain popular to this day in Australia and New Zealand - and a version of them can be found for sale here in the UK, supporting the Royal British Legion.
