Essentially, his argument is that Mormons have become a homogenised group with their own identity - so, while aren't technically an ethnicity, they do function like one in some ways (whereas Catholics, Lutherans and Buddhists don't).
His arguments would also work for the Amish populations in the Upper Eastern Midwest/Great Lakes region (NY, PA, MI, OH, IN, WI, KY, and MO). To maybe a lesser extent the Mennonites also could fall in this too.
Honestly I am unsure, how "Localized" he gets his numbers, as Amish by their social-political believes try to stay away from outsiders as much as possible (doing business with them/neighborly things are mostly okay is my understanding). They live mostly in farm country so it is not like there will be huge pockets of Amish or even other people to tip the balance of the make up of a population, a measurment of county or people per sq. mile/km/what ever.
